​Caramel Puff Corn is a delightful snack that combines the light, airy texture of puffed corn with a rich, buttery caramel coating. Unlike traditional popcorn, puff corn is hull-less, meaning there are no pesky kernels or hulls to deal with, making it an irresistible treat for all ages.

  • 89 ounces puffed corn (hull-less popcorn)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare:
    Preheat your oven to 250°F (120°C). Spray a large roasting pan with nonstick cooking spray and add the puffed corn, spreading it evenly.

  2. Make the Caramel Sauce:

    • In a medium saucepan, melt butter over medium heat.
    • Add brown sugar and corn syrup. Stir to combine.
    • Bring to a boil while stirring constantly, then boil for 2 minutes without stirring.
  3. Add Baking Soda and Vanilla:

    • Remove the saucepan from heat.
    • Stir in baking soda and vanilla extract. The mixture will foam up.
  4. Coat the Puffed Corn:

    • Pour the caramel mixture over the puffed corn in the roasting pan.
    • Stir gently to evenly coat all the puffed corn.
  5. Bake:

    • Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
  6. Cool and Store:

    • Spread the caramel puff corn onto wax paper or foil to cool.
    • Once cooled, break into pieces and store in an airtight container.
