This Caramelized Banana French Toast is a decadent twist on a breakfast classic. Thick slices of buttery French toast are topped with golden caramelized bananas in a rich brown sugar sauce. Perfect for brunch or a special morning treat!

For the French Toast:

  • 4 thick slices of brioche or challah bread (day-old works best)
  • 2 eggs
  • ½ cup milk (whole or half-and-half for extra richness)
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon sugar
  • 1 tablespoon butter (for frying)

For the Caramelized Bananas:

  • 2 ripe bananas (sliced diagonally)
  • 2 tablespoons butter
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum or bourbon (optional, for extra depth)
  • Pinch of salt

For Garnish (Optional):

  • Powdered sugar
  • Chopped pecans or walnuts
  • Extra maple syrup

Instructions

1. Make the French Toast

  1. In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and sugar.
  2. Dip each slice of bread into the mixture, coating both sides well.
  3. Melt butter in a large pan over medium heat.
  4. Cook the French toast for 2-3 minutes per side, until golden brown. Remove and keep warm.

2. Caramelize the Bananas

  1. In the same pan, melt butter over medium heat.
  2. Stir in brown sugar, cinnamon, maple syrup, vanilla, and salt.
  3. Cook for 1-2 minutes until bubbly, then add banana slices.
  4. Sauté for 2 minutes per side until caramelized.
  5. (Optional) Add rum/bourbon, cook for 1 minute, then carefully flambé or stir until alcohol evaporates.

3. Serve & Enjoy!

  1. Place French toast on a plate and spoon over caramelized bananas.
  2. Garnish with powdered sugar, nuts, or extra maple syrup.
  3. Serve warm and enjoy!
