For the Caramelized Onions:

  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon sugar (optional, for extra sweetness)
  • 1 tablespoon balsamic vinegar (optional, for depth of flavor)

For the Flatbread Pizza:

  • 2 flatbreads (or naan)
  • ¼ cup basil pesto (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled goat cheese or Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon pine nuts (optional, for crunch)
  • Fresh basil or arugula (for garnish)

Instructions

Step 1: Caramelize the Onions

  1. Heat olive oil and butter in a skillet over medium-low heat.
  2. Add sliced onions, salt, and sugar, stirring occasionally.
  3. Cook for 25-30 minutes, until deep golden brown. Stir in balsamic vinegar in the last 5 minutes for extra flavor.
  4. Remove from heat and set aside.

Step 2: Assemble the Flatbread Pizza

  1. Preheat oven to 400°F (200°C).
  2. Place flatbreads on a baking sheet.
  3. Spread pesto evenly over each flatbread.
  4. Sprinkle with mozzarella cheese and goat cheese (or Parmesan).
  5. Top with caramelized onions and optional pine nuts.

Step 3: Bake & Serve

  1. Bake for 10-12 minutes, or until cheese is melted and bubbly.
  2. Sprinkle with red pepper flakes and garnish with fresh basil or arugula.
  3. Slice and serve immediately!
