These Carne Asada Bowls are packed with juicy, marinated steak, cilantro-lime rice, beans, fresh toppings, and a zesty dressing. A delicious and customizable meal that’s perfect for meal prep or weeknight dinners!

Ingredients

For the Carne Asada:
  • 1 ½ lbs flank steak (or skirt steak)
  • ¼ cup olive oil
  • ¼ cup fresh lime juice
  • ¼ cup fresh orange juice
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for spice)
  • 2 tablespoons chopped cilantro
For the Cilantro-Lime Rice:
  • 1 cup cooked white or brown rice
  • 1 tablespoon butter
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • ½ teaspoon salt
For the Bowl Toppings:
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 small red onion, diced
  • 1 avocado, sliced or mashed
  • 1 cup cherry tomatoes, halved
  • ¼ cup crumbled cotija or shredded cheese
  • ¼ cup fresh salsa or pico de gallo
For the Dressing (Optional):
  • ¼ cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 teaspoon hot sauce (optional)

Instructions

Marinate & Cook the Steak:

  1. Prepare the Marinade:

    • In a bowl, whisk together olive oil, lime juice, orange juice, soy sauce, garlic, cumin, chili powder, smoked paprika, salt, black pepper, red pepper flakes, and cilantro.
    • Place flank steak in a shallow dish or resealable bag and pour marinade over it.
    • Cover and marinate in the fridge for 30 minutes to 2 hours (longer for more flavor).
  2. Cook the Carne Asada:

    • Heat a grill or skillet over medium-high heat.
    • Cook steak for 4-5 minutes per side, or until it reaches your desired doneness (130°F for medium-rare, 140°F for medium).
    • Let rest for 5 minutes, then slice thinly against the grain.

Prepare the Rice & Dressing:

  1. Make Cilantro-Lime Rice:

    • Stir together warm rice, butter, cilantro, lime juice, and salt.
  2. Make the Dressing (Optional):

    • Whisk together sour cream, lime juice, garlic powder, cumin, and hot sauce until smooth.

Assemble the Carne Asada Bowls:

 

  1. Layer the Bowls:

    • Divide cilantro-lime rice among serving bowls.
    • Top with black beans, corn, cherry tomatoes, red onion, avocado, and sliced steak.
    • Sprinkle with cotija cheese and fresh salsa.
  2. Drizzle & Serve:

    • Drizzle with dressing, garnish with extra cilantro, and serve with lime wedges!

Notes

  • Want extra heat? Add jalapeños or a drizzle of chipotle sauce.
  • Make it low-carb by using cauliflower rice instead of regular rice.
