Carne Asada is a Mexican-style grilled steak, marinated in citrus, garlic, and spices, then seared over high heat for a smoky, charred flavor. It’s juicy, flavorful, and perfect for tacos, burritos, or served with rice and beans. A true crowd-pleaser for BBQs or family dinners!

For the Marinade:

  • 2 lbs (900g) skirt steak or flank steak
  • â…“ cup olive oil
  • ¼ cup fresh lime juice
  • ¼ cup fresh orange juice
  • 2 tbsp soy sauce (adds umami flavor)
  • 2 tbsp apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ½ tsp oregano (Mexican oregano if available)
  • ½ tsp red pepper flakes (optional, for a kick!)
  • ¼ cup chopped fresh cilantro

Instructions

Step 1: Marinate the Steak

  1. In a large bowl or ziplock bag, whisk together all marinade ingredients.
  2. Add the steak, making sure it’s well coated.
  3. Cover and marinate for at least 2 hours, preferably overnight for the best flavor.

Step 2: Grill the Steak

  1. Preheat a grill (or cast-iron skillet) over high heat.
  2. Remove the steak from the marinade and shake off excess liquid.
  3. Grill for 3-5 minutes per side for medium-rare (internal temp: 130-135°F / 55-57°C).
  4. Remove from heat and let it rest for 5-10 minutes before slicing.

Step 3: Slice & Serve

  1. Slice the steak against the grain into thin strips for maximum tenderness.
  2. Serve hot with warm tortillas, rice, beans, salsa, guacamole, or grilled veggies!

Tips & Variations

  • No grill? Cook in a cast-iron skillet over high heat for the same delicious char.
  • Want extra smokiness? Add chipotle powder or grill over charcoal.
  • Make it spicy! Add more chili flakes or fresh jalapeños to the marinade.
  • Tenderize it more? Use a meat mallet to pound the steak before marinating.

  • Tacos: Serve in warm corn tortillas with salsa, onions, and cilantro.
  • Burrito Bowl: Layer over rice, beans, and avocado.
  • Nachos: Top tortilla chips with sliced carne asada, cheese, and jalapeños.
