A hearty, no-bean chili packed with various meats and rich spices, perfect for those following a carnivore or low-carb diet.

Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 lb beef stew meat, diced
  • 1/2 lb bacon, chopped
  • 1 small onion, finely chopped (optional for strict carnivore)
  • 2 cloves garlic, minced (optional)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1/2 cup tomato paste (optional for less strict carnivore)
  • 1 tbsp apple cider vinegar

Instructions

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  2. Add the ground beef, ground pork, and diced stew meat to the pot. Cook until browned, breaking up the ground meat as it cooks.
  3. Add onion and garlic if using, and sauté for 3–4 minutes until softened.
  4. Stir in chili powder, paprika, cumin, cayenne, salt, and pepper. Cook for 1–2 minutes until fragrant.
  5. Add beef broth, tomato paste (if using), and apple cider vinegar. Stir to combine.
  6. Bring to a simmer, reduce heat to low, and cook uncovered for 45 minutes to 1 hour, stirring occasionally.
  7. Stir in crispy bacon before serving. Serve hot.

Notes

  • Omit tomato paste and onion for a stricter carnivore version.
  • Can be made in a slow cooker after browning the meats.
  • Top with shredded cheese or sour cream if dairy is allowed.
