Instructions
In a large bowl, combine shredded carrots, apples, raisins, and parsley if using.
In a small bowl, whisk together lemon juice, honey, olive oil, salt, and pepper.
Pour the dressing over the salad and toss well to combine.
Let sit for 10 minutes to allow flavors to blend. Serve chilled or at room temperature.
