Ingredients

Scale

For the Crust:

  • 1 medium head cauliflower (or 4 cups riced cauliflower)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Toppings (customizable):

  • ½ cup pizza sauce (marinara or pesto)
  • 1 cup shredded mozzarella cheese
  • Pepperoni slices, mushrooms, bell peppers, olives, or any favorite toppings
  • Fresh basil leaves (optional, for garnish)

Instructions

  • Prepare the Cauliflower Rice:

    • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • If using fresh cauliflower, cut into florets and pulse in a food processor until it resembles rice.
  • Cook the Cauliflower:

    • Steam the riced cauliflower in the microwave for 5 minutes or cook it on the stove until tender.
    • Let it cool slightly, then wrap it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. The drier, the better for a crispy crust.
  • Make the Crust:

    • In a large bowl, mix the cauliflower rice, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper until well combined.
    • Press the mixture onto the prepared baking sheet to form a round or rectangular pizza crust, about ¼-inch thick.
  • Bake the Crust:

    • Bake for 20-25 minutes, or until the crust is golden brown and firm.
  • Add Toppings:

    • Spread pizza sauce over the crust, sprinkle with mozzarella cheese, and add your favorite toppings.
    • Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve:

    • Remove from the oven, let cool for 5 minutes, and garnish with fresh basil before slicing.

Notes

  • For extra crispiness, broil the pizza for 2-3 minutes after adding the toppings.
  • Use store-bought riced cauliflower to save time.
  • Make it dairy-free by using vegan cheese and skipping the Parmesan.
