1 medium head of cauliflower (or 4 cups pre-riced cauliflower)
1 tablespoon olive oil
1 garlic clove, minced

½ cup cherry tomatoes, halved
½ avocado, sliced
¼ cup shredded carrots
¼ cup chopped cucumber
2 tablespoons hummus or tzatziki

Make the cauliflower rice:
If using whole cauliflower, chop into florets and pulse in a food processor until rice-sized.
