Quick, smoky-charred sugar snap peas tossed with lemon and feta for a vibrant spring side dish.

Ingredients

  • ½ Tbsp olive oil
  • 1 lb (≈450 g) sugar snap peas, trimmed
  • 2 cloves garlic, smashed or grated
  • ½ lemon (juice + zest)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese

Instructions

  1. Heat olive oil in a large cast‑iron or heavy skillet over high heat.
  2. Add snap peas in a single layer; cook untouched 2–3 min to char.
  3. Stir and cook another 2–3 min until tender‑crisp and bright green.
  4. Add garlic, salt & pepper; cook 1 min more.
  5. Transfer to a shallow bowl; sprinkle with lemon zest, drizzle lemon juice, and top with feta.
  6. Serve immediately as a side to grilled meat, fish, or roasted dishes.

Notes

  • Do not move the peas initially to develop a good char.
  • Omit feta for a dairy‑free version.
  • Add fresh herbs like mint or chives for extra brightness.
  • Leftovers keep 4 days refrigerated; reheat gently or enjoy cold.
