Ingredients

Scale

For the casserole:

  • 1 lb (450 g) fresh green beans, trimmed and blanched (or 3 cups frozen green beans, thawed)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup (120 ml) milk
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste

For the Cheddar Bay topping:

  • 1 cup (120 g) biscuit mix (like Bisquick or homemade)
  • 1/2 cup (50 g) shredded cheddar cheese
  • 1/4 cup (60 ml) unsalted butter, melted
  • 1/3 cup (80 ml) milk

Optional garnish:

  • Crispy fried onions or breadcrumbs for extra crunch

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar casserole dish.
  2. Prepare the casserole base:
    • In a large bowl, mix the cream of mushroom soup, milk, shredded cheddar cheese, garlic powder, paprika, salt, and pepper. Add the green beans and stir until well-coated.
  3. Assemble the casserole:
    • Transfer the green bean mixture into the prepared baking dish and spread it evenly.
  4. Make the Cheddar Bay topping:
    • In a separate bowl, mix the biscuit mix, shredded cheddar cheese, melted butter, and milk until a thick batter forms. Drop spoonfuls of the batter evenly over the green bean mixture.
  5. Bake:
    • Bake the casserole for 25-30 minutes, or until the topping is golden and the casserole is bubbling around the edges.
  6. Optional topping:
    • During the last 5 minutes of baking, sprinkle crispy fried onions or breadcrumbs over the top for added crunch.
  7. Serve:
    • Let the casserole rest for a few minutes before serving. Garnish with parsley if desired.

Notes

  • Make-ahead option: Assemble the casserole base in advance and store it in the fridge. Add the topping just before baking.
  • Customization: Add diced cooked bacon or sautéed mushrooms to the green bean mixture for extra flavor.
