This Cheese and Spinach Stuffed Pastry is crispy, flaky, and filled with a creamy, cheesy spinach mixture. It’s perfect for breakfast, brunch, or as a savory snack. These pastries are easy to make using store-bought puff pastry, and they taste like they came from a bakery!

  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and squeezed dry)
  • 1 tablespoon olive oil or butter
  • 1 garlic clove, minced
  • ½ cup ricotta cheese (or cream cheese for extra creaminess)
  • ½ cup feta cheese, crumbled (or goat cheese)
  • ¼ cup mozzarella or parmesan, shredded
  • 1 egg yolk (for richness, optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional, adds warmth)

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Sesame seeds or nigella seeds (optional, for garnish)


Instructions

Step 1: Prepare the Spinach Filling

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Stir in spinach and cook until wilted (2 minutes). If using frozen spinach, ensure it’s fully thawed and drained.
  4. Transfer to a bowl and let cool slightly.
  5. Mix in ricotta, feta, mozzarella, egg yolk, salt, pepper, and nutmeg until well combined.

Step 2: Prepare the Pastry

  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry on a floured surface and cut into 6-8 equal squares or rectangles.
  3. Place a spoonful of spinach filling in the center of each piece.

Step 3: Shape the Pastries (Choose Your Style!)

✔ Triangles: Fold squares into triangles and seal edges with a fork.

Step 4: Bake to Perfection
