1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1/4 cup ketchup
2 tbsp yellow mustard
2 cups beef broth
2 cups elbow macaroni, uncooked
2 cups shredded cheddar cheese
Salt and pepper, to taste
1 tbsp olive oil
Pickles and chopped parsley for garnish (optional)
Instructions
Preheat oven to 375°F (190°C).
In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until translucent.
Add ground beef and cook until browned. Drain excess fat if necessary.
Stir in garlic and cook for 1 minute until fragrant.
Add diced tomatoes, ketchup, mustard, and beef broth. Stir to combine.
Add uncooked macaroni and bring mixture to a boil. Reduce heat and simmer for 8-10 minutes, stirring occasionally, until pasta is tender.
Stir in 1 1/2 cups of the shredded cheese and season with salt and pepper.
Top with remaining 1/2 cup cheese and transfer skillet to the oven.
Bake uncovered for 10-15 minutes, or until cheese is bubbly and golden.
Garnish with chopped pickles and parsley if desired before serving.
Notes
Use ground turkey or chicken for a lighter version.
Add chopped pickles or bacon bits for extra burger flavor.
