Cheeseburger Quesadillas combine the best of both worlds—juicy ground beef, melty cheese, and classic burger toppings all folded into a crispy, golden tortilla. A quick, fun twist on a favorite meal.

Ingredients

  • 1/2 pound ground beef
  • 1/4 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1 cup shredded cheddar cheese
  • 4 medium flour tortillas
  • 1/4 cup diced pickles
  • Butter or cooking spray for grilling

Instructions

  1. In a skillet over medium heat, cook ground beef and chopped onion until browned and cooked through. Drain excess fat.
  2. Stir in salt, pepper, ketchup, and mustard. Mix well and remove from heat.
  3. Lay out tortillas and sprinkle half of each with cheddar cheese, beef mixture, diced pickles, and more cheese on top.
  4. Fold tortillas in half to create quesadillas.
  5. Heat a non-stick skillet or griddle over medium heat and lightly butter or spray the surface.
  6. Cook quesadillas for 2–3 minutes per side, or until golden brown and cheese is melted.
  7. Remove from heat, slice into wedges, and serve hot with optional dipping sauce like more ketchup or a burger-style sauce.

Notes

  • Feel free to add cooked bacon or tomatoes for extra flavor.
  • Use a blend of cheeses for a gooier result.
  • Can be made ahead and reheated in a skillet or oven.
