1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
8 oz (225 g ) cream cheese, softened
1/4 cup granulated sugar (for cheesecake layer)
1 egg (for cheesecake layer)
1/2 teaspoon vanilla extract (for cheesecake layer)
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch square baking pan with parchment paper.
In a saucepan, melt butter. Remove from heat and stir in 1 cup sugar, 2 eggs, and 1 tsp vanilla extract.
Mix in cocoa powder, flour, salt, and baking powder until just combined. Pour 2/3 of the brownie batter into the prepared pan and spread evenly.
In a separate bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and 1/2 tsp vanilla until smooth.
Spread the cheesecake layer over the brownie batter in the pan.
Dollop the remaining brownie batter on top and swirl gently with a knife or skewer to create a marbled effect.
Bake for 30–35 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
Let cool completely in the pan before slicing and serving.
Notes
For extra richness, add chocolate chips to the brownie batter.
Store in an airtight container in the fridge for up to 5 days.
These brownies freeze well and can be enjoyed chilled or at room temperature.
