A comforting and cheesy chicken and corn casserole made with tender chicken, sweet corn, and creamy cheese sauce baked to golden perfection—perfect for a family dinner or potluck.

  • 2 cups cooked chicken, shredded
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (15 ounces) cream-style corn
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded chicken, drained whole kernel corn, cream-style corn, cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. In a small bowl, mix crushed crackers or breadcrumbs with melted butter, then sprinkle over the top of the casserole.
  5. Bake for 25–30 minutes, or until the casserole is hot and bubbly and the topping is golden brown.
  6. Let cool slightly before serving.

  • Use rotisserie chicken for a quicker prep.
  • Add diced green chiles or jalapeños for a spicy kick.
  • Substitute cheddar with pepper jack or mozzarella for a different flavor profile.
