Cheesy Colcannon Balls are a delicious twist on traditional Irish colcannon — mashed potatoes mixed with cabbage and green onions — rolled into bite-sized balls, stuffed with melty cheese, and fried until golden and crispy. 2 cups mashed potatoes (preferably cold or leftover)
1 cup cooked cabbage or kale, finely chopped
3 green onions, finely sliced
½ teaspoon salt
¼ teaspoon black pepper
1 egg
½ cup shredded cheddar cheese (plus extra cubes for stuffing)
1 cup breadcrumbs (plus extra for coating)
Oil for frying
In a large bowl, mix mashed potatoes, cabbage, green onions, salt, pepper, egg, shredded cheddar, and 1 cup of breadcrumbs until well combined.
Scoop about 2 tablespoons of the mixture and flatten slightly in your hand. Place a small cube of cheese in the center, then shape into a ball around it. Repeat with remaining mixture.
Roll each ball in additional breadcrumbs for an extra crispy coating.
Heat 1–2 inches of oil in a deep skillet or pot to 350°F (175°C).
Fry the balls in batches for 2–3 minutes, turning until golden brown and crispy.
Drain on paper towels and serve hot.
Use cold mashed potatoes for best results — they’re easier to shape.
Try with mozzarella, gouda, or Irish cheddar in the center.
