This no-fuss appetizer features cubes of cheese marinated in a flavorful herb dressing, paired with savory salami slices and tangy pickles. Serve on toothpicks or skewers for an effortless and elegant presentation.

Ingredients

  • 8 oz (225 g) sharp cheddar cheese (or your favorite cheese), cut into cubes
  • 12 slices of salami (folded or rolled)
  • 12 small pickles (cornichons or dill pickles)

For the marinade:

  • 1/4 cup (60 ml) olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano and thyme)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and black pepper, to taste

Instructions

  • Prepare the marinade:
    • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, Italian seasoning, red pepper flakes (if using), salt, and pepper.
  • Marinate the cheese:
    • Place the cheese cubes in a shallow dish or resealable plastic bag. Pour the marinade over the cheese and toss gently to coat.
    • Cover and refrigerate for at least 1 hour, or up to 24 hours, for the flavors to meld. Stir occasionally if possible.
  • Assemble the skewers:
    • Thread one cheese cube, one folded slice of salami, and one pickle onto a toothpick or small skewer. Repeat with the remaining ingredients.
  • Serve:
    • Arrange the skewers on a serving platter and drizzle any remaining marinade over the top for extra flavor.

Notes

  • Swap the cheddar for mozzarella, pepper jack, or gouda for variety.
  • You can add cherry tomatoes, olives, or roasted red peppers to the skewers for extra color and flavor.
  • These skewers can be made up to 4 hours in advance and stored in the fridge.
