Cheesy Fiesta Potatoes are a crave-worthy side dish made with crispy, seasoned potato bites topped with warm nacho cheese sauce and cool sour cream. Inspired by the popular Taco Bell favorite, they’re perfect for a Tex-Mex twist at home.

Ingredients

  • 4 medium russet potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 cup nacho cheese sauce, warmed
  • 1/2 cup sour cream
  • 2 tbsp chopped green onions (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss diced potatoes with oil, paprika, garlic powder, onion powder, cumin, salt, and pepper.
  3. Spread potatoes in a single layer on the baking sheet and bake for 25–30 minutes, flipping halfway, until golden and crispy.
  4. Remove from oven and let cool slightly.
  5. Top with warm nacho cheese sauce and a dollop of sour cream.
  6. Garnish with green onions if desired and serve immediately.

Notes

  • Air fry potatoes at 400°F for 15–20 minutes for an even crispier version.
  • Add cooked seasoned ground beef or beans for a heartier meal.
  • Use taco seasoning as a quick substitute for the spice mix.
