Cheesy Garlic Bread Shrimp Grilled Cheese is an indulgent sandwich combining succulent shrimp, melted cheese, and buttery garlic bread. It’s crispy, gooey, savory, and packed with bold flavor—perfect for lunch or dinner.

  • 8 slices Italian or sourdough bread
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/2 lb cooked shrimp, chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 tbsp olive oil (for sautéing shrimp, if raw)

Instructions

  1. In a small bowl, mix softened butter, minced garlic, parsley, and salt. Spread the garlic butter on one side of each slice of bread.
  2. If using raw shrimp, sauté in olive oil over medium heat until pink and cooked through. Chop and set aside.
  3. Place four slices of bread, buttered side down, on a flat surface. Layer with a mix of shredded cheeses and chopped shrimp.
  4. Top with remaining slices of bread, buttered side up.
  5. Heat a skillet or griddle over medium heat. Grill sandwiches for 3–4 minutes per side or until bread is golden and cheese is melted.
  6. Slice and serve hot.
