  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 4 cups chicken broth (or beef broth for a deeper flavor)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce (optional, adds umami)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese (or a mix of cheddar & Monterey Jack)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon xanthan gum (optional, for thickening)
  • ½ cup cooked crumbled bacon (optional, for topping)

Instructions

  1. Sauté the aromatics:

    • In a large pot or Dutch oven, melt butter over medium heat.
    • Add onion and cook for 3-4 minutes until softened.
    • Stir in garlic and cook for 30 seconds until fragrant.
  2. Cook the cabbage:

    • Add chopped cabbage, broth, salt, pepper, smoked paprika, thyme, and Worcestershire sauce.
    • Bring to a boil, then reduce heat and simmer for 20 minutes, until the cabbage is tender.
  3. Make it creamy & cheesy:

    • Stir in heavy cream and cheddar cheese, stirring until melted and smooth.
