For the pasta:

  • 12 ounces (340 g) rotini pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups (480 ml) milk (warm)
  • 1 1/2 cups (170 g) shredded cheddar cheese
  • 1/2 cup (50 g) shredded Parmesan cheese
  • Salt and black pepper, to taste

For the garlic butter beef:

  • 1 pound (450 g) ground beef
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste

For garnish:

  • Chopped parsley
  • Extra Parmesan cheese

Instructions

For the pasta:

  1. Cook the rotini:
    • Bring a large pot of salted water to a boil. Cook the rotini according to package instructions until al dente. Drain and set aside.
  2. Make the cheese sauce:
    • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes until lightly golden.
    • Gradually add the warm milk, whisking constantly to create a smooth sauce.
    • Stir in the shredded cheddar and Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

For the garlic butter beef:

  1. Cook the beef:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add garlic butter seasoning:
    • Push the beef to one side of the skillet and add the butter. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
    • Mix the garlic butter with the beef, then stir in Worcestershire sauce, paprika, onion powder, salt, and black pepper. Cook for another 1–2 minutes to combine flavors.

Combine and serve:

  1. Assemble the dish:
    • Toss the cooked rotini in the cheese sauce until well coated. Plate the pasta and top with the garlic butter beef mixture.
  2. Garnish:
    • Sprinkle with chopped parsley and extra Parmesan cheese for added flavor. Serve hot.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the beef.
  • Swap ground beef for ground turkey or chicken for a leaner option.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave.
