This Cheesy Steak Bites and Rotini Pasta is a hearty and indulgent dish combining tender, seared steak bites with perfectly cooked rotini pasta in a rich, cheesy sauce. Perfect for a comforting dinner or to impress guests with minimal effort!

For the Steak Bites:

  • 1 lb steak (sirloin, ribeye, or flank), cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp steak seasoning or Cajun seasoning
  • Salt and black pepper, to taste

For the Pasta and Sauce:

  • 12 oz rotini pasta
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley, chopped
  • Crushed red pepper flakes

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Steak Bites:
    • Season the steak pieces with steak or Cajun seasoning, and a pinch of salt and black pepper.
    • Heat olive oil and butter in a large skillet over medium-high heat. Add the steak bites and sear for 1–2 minutes per side, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.
  3. Make the Cheese Sauce:
    • In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for 1–2 minutes to create a roux.
    • Gradually whisk in the milk, ensuring no lumps form. Cook for 2–3 minutes, or until the mixture starts to thicken.
    • Stir in the cheddar, mozzarella, and Parmesan cheeses until melted and smooth. Add smoked paprika, salt, and pepper to taste.
  4. Combine and Serve:
    • Toss the cooked pasta in the cheese sauce until fully coated. Add the steak bites back to the skillet and toss gently to combine.
    • Garnish with fresh parsley and crushed red pepper flakes if desired. Serve immediately.

Notes

  • For extra flavor, add sautéed mushrooms, onions, or bell peppers to the dish.
  • Substitute heavy cream for a richer sauce or use half-and-half for a lighter option.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
