Ingredients

Scale

Serves 8

  • For the dip:
    • 1 lb (450 g) ground beef
    • 1 packet (1 oz / 28 g) taco seasoning mix
    • 1/4 cup (60 ml) water
    • 8 oz (225 g) cream cheese, softened
    • 1 cup (240 ml) sour cream
    • 1 1/2 cups (150 g) shredded cheddar cheese
    • 1 cup (100 g) shredded Monterey Jack cheese
    • 1 (10 oz / 280 g) can of diced tomatoes with green chilies, drained
  • Optional toppings:
    • 1/4 cup (25 g) chopped green onions
    • 1/4 cup (25 g) diced tomatoes or pico de gallo
    • 2 tablespoons chopped fresh cilantro
    • Sliced jalapeños (for spice)

Instructions

  1. Cook the ground beef:
    • Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula. Drain any excess fat.
    • Stir in the taco seasoning and water. Simmer for 2-3 minutes, then remove from heat.
  2. Prepare the dip base:
    • In a mixing bowl, combine the softened cream cheese, sour cream, and diced tomatoes with green chilies. Mix until smooth.
  3. Assemble the dip:
    • Preheat your oven to 375°F (190°C).
    • Spread the cream cheese mixture evenly in the bottom of an oven-safe baking dish (about 9×9 inches or similar size).
    • Layer the cooked taco meat over the cream cheese mixture.
    • Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top.
  4. Bake the dip:
    • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Garnish and serve:
    • Remove from the oven and let cool slightly. Garnish with green onions, diced tomatoes, cilantro, or jalapeños, as desired.
    • Serve warm with tortilla chips, crackers, or veggie sticks.

Notes

  • Substitute ground beef with ground turkey or plant-based crumbles for a lighter or vegetarian option.
  • Add black beans or corn for extra texture and flavor.
  • For a stovetop version, assemble the dip in a skillet, cover, and cook on low until the cheese is melted.
