Cheesy Taco Ground Beef & Cauliflower Rice is a low-carb, high-protein skillet meal packed with bold taco flavors, tender ground beef, cauliflower rice, and gooey melted cheese. It’s a quick, satisfying dinner that fits into keto and low-carb diets.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 3 cups cauliflower rice (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, jalapeños, green onions

Instructions

  1. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
  2. Add diced onion and cook 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
  3. Sprinkle in taco seasoning and add water. Stir to combine and simmer for 2–3 minutes.
  4. Add cauliflower rice to the skillet. Mix well and cook for 5–7 minutes, until tender and heated through.
  5. Stir in half of the shredded cheese until melted and incorporated.
  6. Sprinkle remaining cheese on top. Cover skillet and let sit for 1–2 minutes until cheese melts.
  7. Garnish with chopped cilantro and optional toppings before serving.

Notes

  • Use pre-riced cauliflower to save time.
  • Ground turkey or chicken can be substituted for beef.
  • Add bell peppers or zucchini for extra veggies.
  • Store leftovers in the fridge for up to 3 days.
