A delightful twist on the classic Italian dessert, this Cherry Amaretto Tiramisu combines layers of creamy mascarpone with cherry preserves and a hint of almond liqueur for a rich and fruity treat.

Ingredients

  • 1 cup cherry preserves
  • 1/2 cup Amaretto liqueur
  • 1 cup strong brewed coffee, cooled
  • 16 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 2430 ladyfinger cookies
  • Fresh cherries, for garnish
  • Dark chocolate shavings, for garnish

Instructions

  1. In a small bowl, mix the brewed coffee with Amaretto liqueur and set aside.
  2. In a mixing bowl, whip the heavy cream until soft peaks form. Add sugar and vanilla extract and continue whipping until stiff peaks form.
  3. In another bowl, beat mascarpone cheese until smooth. Gently fold in the whipped cream until fully combined.
  4. Dip each ladyfinger briefly into the coffee-Amaretto mixture and arrange in a single layer in a 9×9 inch dish.
  5. Spread half of the mascarpone mixture over the ladyfingers and smooth the top.
  6. Spread half of the cherry preserves over the mascarpone layer.
  7. Repeat with another layer of dipped ladyfingers, remaining mascarpone mixture, and cherry preserves.
  8. Cover and refrigerate for at least 4 hours or overnight for best results.
  9. Before serving, top with fresh cherries and dark chocolate shavings.

Notes

  • Use pitted fresh cherries if cherry preserves are unavailable.
  • Make sure not to over-soak the ladyfingers to avoid a soggy texture.
  • For a non-alcoholic version, substitute Amaretto with almond extract (1-2 tsp) and more coffee.
