These Cherry Pie Bars have all the flavors of classic cherry pie in an easy-to-make bar form. With a buttery shortbread-like crust, sweet cherry filling, and a drizzle of glaze, they’re a crowd-pleaser!

For the Crust & Topping:

  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, but adds great flavor)
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 (21 oz) can cherry pie filling

For the Glaze:

 

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • ½ teaspoon vanilla or almond extract

Instructions

  • Preheat & Prep:

    • Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  • Make the Crust & Topping:

    • In a large bowl, cream together butter and sugar until fluffy.
    • Add eggs, vanilla extract, and almond extract, mixing until combined.
    • Gradually mix in flour and salt until a thick batter forms.
  • Assemble the Bars:

    • Spread â…” of the batter evenly into the prepared baking pan.
    • Spread the cherry pie filling over the batter.
    • Drop the remaining batter in spoonfuls over the cherry filling (it won’t cover it completely, but will spread as it bakes).
  • Bake:

    • Bake for 35-40 minutes, or until the top is golden brown.
    • Let cool completely before adding the glaze.

 

  • Make the Glaze & Drizzle:

    • In a small bowl, whisk together powdered sugar, milk, and vanilla or almond extract until smooth.
    • Drizzle over cooled bars, let set, then slice and serve!

Notes

  • Use homemade cherry pie filling for a fresher taste.
  • Swap cherries for blueberry, apple, or raspberry pie filling for variety.

 

  • Store in an airtight container at room temperature for 2 days or refrigerate for up to a week.
