These chewy French toast cookies combine the warm spices of classic French toast with the soft texture of a cookie, featuring hints of cinnamon, maple, and vanilla for a cozy, breakfast-inspired treat.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp maple extract (optional but recommended)
  • 1 1/2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 cup maple syrup
  • 1/2 cup white chocolate chips or cinnamon chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg, vanilla extract, and maple extract. Beat until well combined.
  4. Mix in maple syrup until smooth.
  5. In a separate bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  6. Gradually add dry ingredients to wet ingredients, mixing until a dough forms.
  7. Fold in white chocolate or cinnamon chips if using.
  8. Scoop tablespoon-sized dough balls onto prepared baking sheet, spacing 2 inches apart.
  9. Bake for 9–11 minutes, or until edges are set and centers look slightly underdone.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, sprinkle cookies with cinnamon sugar before baking.
  • Do not overbake – they continue to cook slightly on the pan while cooling.
  • Store in an airtight container for up to 5 days.
