These Chewy Pecan Pie Bars are a delicious twist on traditional pecan pie, featuring a buttery shortbread crust and a gooey, caramelized pecan filling. Perfect for holiday gatherings, potlucks, or anytime you crave a rich, nutty dessert!

For the Shortbread Crust:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, melted

For the Pecan Filling:

  • 1 cup light brown sugar, packed
  • ½ cup corn syrup (light or dark)
  • ½ cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups chopped pecans

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan or line with parchment paper for easy removal.

Step 2: Make the Shortbread Crust

  1. In a medium bowl, mix flour, sugar, salt, and melted butter until combined.
  2. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake for 15-18 minutes, or until lightly golden. Set aside to cool slightly.

Step 3: Prepare the Pecan Filling

  1. In a saucepan over medium heat, whisk together brown sugar, corn syrup, and heavy cream. Stir until sugar dissolves and mixture begins to bubble.
  2. Remove from heat and whisk in eggs, vanilla, and salt. Stir in chopped pecans.

Step 4: Assemble & Bake

  1. Pour the pecan mixture over the pre-baked crust, spreading evenly.
  2. Bake for 25-30 minutes, or until the filling is set and slightly firm in the center.
  3. Let cool completely before slicing into bars.

Step 5: Serve & Enjoy!

  • Slice into squares and serve as-is or with a drizzle of caramel or whipped cream!


Notes

  • Swap corn syrup for maple syrup for a different flavor.
