These Chicken Alfredo Lasagna Rolls are a creamy, cheesy, and comforting twist on traditional lasagna. Rolled-up lasagna noodles filled with shredded chicken, ricotta, and Parmesan, then smothered in a rich Alfredo sauce—perfect for a cozy family dinner!

For the Filling:

  • 12 lasagna noodles, cooked and drained
  • 2 cups shredded cooked chicken (rotisserie works great!)
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 egg, lightly beaten (helps bind the filling)

For the Alfredo Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream (or half & half)
  • 1 cup grated Parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg (optional, for extra depth)

For Topping:

  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1️⃣ Cook the Lasagna Noodles

  • Boil lasagna noodles according to package directions until al dente.
  • Drain and lay them out flat on parchment paper to prevent sticking.

2️⃣ Prepare the Chicken Filling

  • In a bowl, mix shredded chicken, ricotta, mozzarella, Parmesan, garlic powder, salt, pepper, Italian seasoning, and beaten egg.

3️⃣ Make the Alfredo Sauce

  • In a saucepan, melt butter over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Pour in heavy cream, stir, and let it simmer for 2 minutes.
  • Gradually stir in Parmesan cheese, salt, pepper, and nutmeg.
  • Simmer for 2-3 minutes until slightly thickened.

4️⃣ Assemble the Lasagna Rolls

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Spread ½ cup Alfredo sauce on the bottom of the dish.
  • Spread 2 tablespoons of the chicken mixture evenly over each lasagna noodle.
  • Roll up each noodle tightly and place seam-side down in the dish.

5️⃣ Add Sauce & Cheese

  • Pour the remaining Alfredo sauce over the rolls.
  • Sprinkle with mozzarella and Parmesan cheese.

6️⃣ Bake & Serve

  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for another 10 minutes until cheese is bubbly.
  • Garnish with fresh parsley and serve warm!


Notes
