A wholesome and hearty chicken and broccoli soup made with tender chicken, fresh broccoli, and a light creamy broth—perfect for a cozy, nutritious meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded or diced
  • 3 cups broccoli florets, chopped
  • 1 medium carrot, sliced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion and cook until softened, about 4-5 minutes.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Add broccoli, carrot, chicken, and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, until vegetables are tender.
  4. In a small bowl, whisk flour with milk until smooth (if using), then pour into the soup and stir well.
  5. Add heavy cream and thyme, and simmer for another 3-4 minutes until the soup slightly thickens.
  6. Season with salt and pepper to taste. Serve hot with crusty bread if desired.

Notes

  • Use rotisserie chicken for quicker prep.
  • For a chunkier texture, don’t overcook the broccoli.
  • You can blend part of the soup for a smoother consistency.
