This Chicken Chipotle recipe features tender chicken breasts simmered in a smoky, spicy chipotle sauce made with adobo peppers, garlic, and spices—perfect for tacos, bowls, or serving with rice.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 23 chipotle peppers in adobo sauce, chopped
  • 2 tablespoons adobo sauce (from the chipotle can)
  • 1/2 cup chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté for 2–3 minutes until fragrant and softened.
  3. Add chicken to the skillet, season with salt, pepper, cumin, and paprika. Sear each side for 2–3 minutes until lightly browned.
  4. Add chopped chipotle peppers, adobo sauce, and chicken broth to the pan.
  5. Cover and simmer on low for 15–20 minutes or until chicken is fully cooked and tender.
  6. Remove chicken, shred or slice, then return to the skillet and toss in the sauce.
  7. Finish with lime juice and garnish with fresh cilantro if desired. Serve warm.

Notes

  • Adjust the number of chipotle peppers to control the heat level.
  • Delicious served in tacos, over rice, or in burrito bowls.
  • Leftovers can be refrigerated for up to 4 days or frozen.
