  • 1 can (10.5 oz) cream of chicken soup

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp cold unsalted butter, diced
  • 1/2 cup buttermilk (or regular milk with 1/2 tsp vinegar)
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

1. Preheat Oven:

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or an oven-safe skillet.

2. Make the Filling:

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5-7 minutes until softened. Stir in garlic and cook for another minute.
  3. Add the cooked chicken, cream of chicken soup, chicken broth, thyme, paprika, and peas. Mix well and season with salt and pepper to taste.
  4. Pour the filling into the prepared baking dish.

3. Make the Biscuit Topping:

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the buttermilk and cheese (if using) until just combined. Be careful not to overmix.

4. Assemble the Cobbler:

  1. Drop spoonfuls of the biscuit dough over the filling, leaving a bit of space between each dollop for even baking.
