Chicken Fajitas are a flavorful Tex-Mex favorite featuring juicy, seasoned chicken strips sautéed with colorful bell peppers and onions, served hot with tortillas and toppings.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Flour or corn tortillas for serving
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions

  1. In a large bowl, toss chicken strips with 1 tablespoon olive oil and all the spices. Set aside to marinate for 10-15 minutes.
  2. Heat remaining olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add bell peppers and onions. Sauté for 5-6 minutes until tender-crisp.
  5. Return chicken to the skillet and toss everything together to combine and heat through.
  6. Serve hot with warm tortillas and your favorite toppings.

  • Slice chicken and vegetables evenly for uniform cooking.
  • Use a cast iron skillet for the best sear and flavor.
  • Marinate chicken longer for even deeper flavor.
  • Leftovers are great for salads, bowls, or quesadillas.
