These Chicken Gyro Bowls are a fresh, healthy, and delicious way to enjoy the flavors of a classic Greek gyro in a bowl! Juicy marinated chicken, fluffy rice, crisp veggies, and creamy tzatziki sauce come together for an easy, flavor-packed meal. Perfect for meal prep or a quick weeknight dinner!

For the Chicken:

  • 1 lb boneless, skinless chicken breast (or thighs)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bowl Base:

  • 2 cups cooked basmati or jasmine rice (or quinoa)
  • 1 cup chopped romaine lettuce

For the Toppings:

  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup Kalamata olives, sliced (optional)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cup cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill (or 1 tsp dried)
  • ½ tsp salt

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
  2. Add the chicken and coat well. Marinate for at least 30 minutes (or up to 24 hours).

Step 2: Cook the Chicken

  1. Heat a skillet or grill pan over medium-high heat.
  2. Cook the chicken for 4–5 minutes per side, or until fully cooked (internal temp of 165°F).
  3. Let rest for 5 minutes, then slice or chop into bite-sized pieces.

Step 3: Make the Tzatziki Sauce

  1. In a small bowl, mix together Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt.
  2. Refrigerate until ready to use.

Step 4: Assemble the Bowls

  1. Divide rice and romaine lettuce between serving bowls.
  2. Top with chicken, tomatoes, cucumber, red onion, feta cheese, and olives.
  3. Drizzle with tzatziki sauce and enjoy!
