Chicken Meatball Cassoulet is a hearty and wholesome French-inspired dish made with tender chicken meatballs, white beans, and vegetables slow-cooked in a savory broth for a comforting one-pot meal.

Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1/2 tsp smoked paprika
  • 1 bay leaf
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, egg, garlic, thyme, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add meatballs and cook until browned on all sides, then remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery for 5 minutes until softened.
  4. Stir in white beans, chicken broth, smoked paprika, and bay leaf. Bring to a simmer.
  5. Return meatballs to the pot, cover, and simmer for 20–25 minutes, or until meatballs are cooked through and vegetables are tender.
  6. Remove bay leaf, adjust seasoning if needed, and garnish with chopped parsley before serving.

Notes

  • Use homemade or low-sodium chicken broth for better flavor control.
  • For a crispy top, transfer to an oven-safe dish and broil briefly before serving.
  • This dish pairs well with crusty bread or a green salad.
