These Chicken Nachos are a crowd-pleasing appetizer or quick dinner, loaded with tender shredded chicken, melted cheese, and all your favorite toppings layered over crispy tortilla chips.

  • 8 oz tortilla chips
  • 2 cups cooked shredded chicken
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh or canned)
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1 jalapeño, sliced (optional)
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: sour cream, salsa, guacamole, diced tomatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, mix shredded chicken with taco seasoning and water. Heat over medium until warmed through and evenly coated. Remove from heat.
  3. Spread tortilla chips in an even layer on a large baking sheet or oven-safe platter.
  4. Top chips with chicken, beans, corn, cheese, olives, red onion, and jalapeño slices.
  5. Bake for 8–10 minutes, or until cheese is melted and bubbly.
  6. Remove from oven and sprinkle with fresh cilantro.
  7. Serve immediately with your favorite toppings like sour cream, salsa, or guacamole.
