In a large ovenproof skillet or baking dish, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned, about 5-7 minutes.
Add minced garlic and cook for another minute until fragrant.
Stir in the orzo pasta, chicken broth, and milk. Bring to a simmer.
Mix in the spinach and cherry tomatoes.
Sprinkle the mozzarella and Parmesan cheese evenly over the top.
Transfer the skillet to the preheated oven and bake uncovered for 20-25 minutes, or until the orzo is tender and the top is golden and bubbly.
Let sit for 5 minutes before serving.
