A comforting and hearty chicken orzo bake made with tender chicken, vegetables, and creamy orzo pasta, all baked together for an easy and satisfying meal.

  • 1 lb (450 g) boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Parmesan cheese, grated
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large ovenproof skillet or baking dish, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned, about 5-7 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the orzo pasta, chicken broth, and milk. Bring to a simmer.
  5. Mix in the spinach and cherry tomatoes.
  6. Sprinkle the mozzarella and Parmesan cheese evenly over the top.
  7. Transfer the skillet to the preheated oven and bake uncovered for 20-25 minutes, or until the orzo is tender and the top is golden and bubbly.
  8. Let sit for 5 minutes before serving.

Notes

  • Substitute spinach with kale or arugula if desired.
  • Use rotisserie chicken for an even quicker preparation.
  • Add red pepper flakes for a spicy kick.
