Ingredients

Scale

For the chicken:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup (125 g) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup (100 g) breadcrumbs (Italian seasoned preferred)
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1/4 cup (60 ml) vegetable oil, for frying

For the topping:

  • 2 cups (500 ml) marinara sauce
  • 1 cup (100 g) shredded mozzarella cheese
  • 1/4 cup (25 g) grated Parmesan cheese
  • Fresh basil leaves, for garnish

For serving (optional):

  • Cooked spaghetti or your favorite pasta

Instructions

1. Prepare the chicken

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch. Season both sides with salt and black pepper.

2. Bread the chicken

  1. Set up a breading station with three shallow bowls:
    • One with the flour.
    • One with the beaten eggs.
    • One with the breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning mixed together.
  2. Dredge each chicken breast in the flour, shaking off excess. Dip it into the beaten eggs, then coat it in the breadcrumb mixture, pressing gently to adhere.

3. Fry the chicken

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Fry the chicken in batches for 2–3 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain.

4. Assemble and bake

  1. Spread 1/2 cup of marinara sauce on the bottom of a 9×13-inch baking dish.
  2. Arrange the fried chicken breasts in the dish. Spoon the remaining marinara sauce evenly over the chicken.
  3. Top each piece with shredded mozzarella and sprinkle with grated Parmesan.
  4. Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (165°F/74°C internal temperature).

5. Serve

  • Garnish with fresh basil leaves and serve hot over cooked spaghetti or alongside a green salad.

Notes

  • Make it crispy: For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
  • Marinara tip: Use a high-quality marinara sauce or make your own for the best flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for the best texture.
