  • 2 large eggs, beaten

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

For the Sandwiches:

  • 4 hoagie rolls or ciabatta buns, toasted
  • 1 1/2 cups marinara sauce (store-bought or homemade)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil or parsley, chopped (optional)

Instructions

1. Prepare the Chicken:

  • In three separate bowls, set up a breading station:

    • Bowl 1: Flour mixed with salt and pepper.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Breadcrumbs, grated Parmesan, garlic powder, and Italian seasoning.
  • Coat each chicken cutlet in flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture.

  • Press gently to ensure an even coating.

2. Fry the Chicken:

  • Heat vegetable oil in a large skillet over medium heat.
  • Cook the chicken cutlets for 3-4 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C).
  • Transfer to a paper towel-lined plate to drain excess oil.

3. Assemble the Sandwiches:

  • Preheat your oven to 400°F (200°C).
  • Place the fried chicken cutlets on a baking sheet.
  • Spoon marinara sauce over each cutlet.
  • Sprinkle with shredded mozzarella and grated Parmesan cheese.

4. Melt the Cheese:

  • Bake for 5-7 minutes until the cheese is melted and bubbly.
  • For extra golden cheese, broil for 1-2 minutes, keeping a close eye to avoid burning.

5. Build the Sandwiches:

  • Spread a little marinara sauce on each toasted roll.
  • Add the cheesy chicken cutlet.
  • Top with fresh basil or parsley if desired.

6. Serve:

  • Serve warm with a side of chips, salad, or fries for a complete meal.
