These chicken piccata meatballs are juicy, flavorful, and coated in a zesty lemon-butter sauce with capers. A fun twist on classic piccata, they’re perfect over pasta, rice, or with crusty bread!

For the Meatballs:
  • 1 lb ground chicken
  • ½ cup breadcrumbs (panko or regular)
  • ¼ cup Parmesan cheese, grated
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 tablespoon olive oil (for cooking)
For the Piccata Sauce:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ¼ cup fresh lemon juice (about 1 lemon)
  • 2 tablespoons capers, drained
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup heavy cream (optional, for a creamy version)
  • 2 tablespoons fresh parsley, for garnish

Instructions

  1. Make the Meatballs:

    • In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, black pepper, and Italian seasoning.
    • Form into 1-inch meatballs (about 16 meatballs).
  2. Cook the Meatballs:

    • Heat 1 tablespoon olive oil in a large skillet over medium heat.
    • Cook the meatballs for 8-10 minutes, turning occasionally, until browned on all sides and fully cooked (internal temp 165°F).
    • Remove from the skillet and set aside.
  3. Make the Piccata Sauce:

    • In the same skillet, melt butter and add olive oil.
    • Sauté garlic for 30 seconds until fragrant.
    • Pour in chicken broth, lemon juice, capers, salt, and black pepper. Simmer for 2 minutes.
    • (Optional: Stir in heavy cream for a creamy sauce.)
  4. Finish & Serve:

    • Return meatballs to the skillet, spoon sauce over them, and simmer for 2 minutes.
    • Garnish with fresh parsley and serve over pasta, rice, or with crusty bread.

Notes

  • For extra crispiness, bake meatballs at 400°F for 15 minutes instead of pan-frying.
  • Swap chicken for turkey for a leaner version.
  • Make it gluten-free by using almond flour or gluten-free breadcrumbs.
