Chicken Provençal is a classic French dish featuring chicken simmered with tomatoes, olives, garlic, and herbs de Provence, resulting in a flavorful and rustic Mediterranean-style meal.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes (or 1 can diced tomatoes)
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup dry white wine
  • 1 tsp herbs de Provence
  • Salt and pepper to taste
  • 1 tbsp capers (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Season chicken thighs with salt, pepper, and a bit of herbs de Provence.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down until golden, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add chopped onion and cook until softened, about 3-4 minutes.
  4. Add garlic and cook for 1 minute more.
  5. Pour in the white wine to deglaze the pan, scraping up any brown bits.
  6. Add tomatoes, olives, capers (if using), and remaining herbs de Provence. Stir well.
  7. Return chicken to the skillet, skin-side up. Cover and simmer on low heat for 30 minutes, or until chicken is cooked through and tender.
  8. Uncover and simmer for an additional 5-10 minutes to thicken the sauce slightly, if desired.
  9. Garnish with fresh parsley and serve hot.

Notes

  • Serve with crusty bread, rice, or roasted potatoes.
  • Boneless chicken can be used for a quicker version.
  • Add a pinch of red pepper flakes for a spicy kick.
