These crispy, cheesy chicken quesadillas are packed with flavorful shredded chicken, gooey melted cheese, and a golden tortilla. Perfect for a quick lunch, dinner, or snack!

For the Quesadillas:
  • 2 cups cooked, shredded chicken (rotisserie or grilled)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • 1 tablespoon lime juice (optional)
  • 1 tablespoon olive oil or butter
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack)
  • ½ cup diced bell peppers (optional)
  • ½ cup diced onions (optional)
For Serving (Optional):
  • Sour cream
  • Guacamole
  • Salsa
  • Chopped cilantro

 

Instructions

  1. Prepare the Chicken:

    • In a bowl, mix shredded chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and lime juice. Toss to coat evenly.
  2. Assemble the Quesadillas:

    • Heat a large skillet over medium heat and add a little olive oil or butter.
    • Place a tortilla in the skillet and sprinkle one-half with a generous amount of cheese.
    • Add a layer of seasoned chicken and any optional veggies.
    • Sprinkle more cheese on top and fold the tortilla in half.
  3. Cook Until Crispy:

    • Cook for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is fully melted.
    • Repeat with the remaining tortillas.
  4. Slice & Serve:

    • Cut into wedges and serve with sour cream, guacamole, or salsa. Enjoy!

Notes

  • Make it spicy by adding chopped jalapeños or red pepper flakes.
  • Use corn tortillas for a gluten-free version.
  • Swap the chicken for ground beef, shrimp, or black beans for a different twist!
