1 celery stalk, finely chopped
1/4 cup red grapes, halved or quartered
2 tablespoons red onion, finely chopped
1 tablespoon chopped fresh parsley (optional)
Salt and black pepper, to taste
Optional: squeeze of lemon juice for brightness
For Serving:
Mini phyllo shells, cucumber rounds, crackers, or sliced baguette
Optional garnishes: extra parsley, paprika, chopped nuts
In a medium bowl, mix together the chicken, mayo (or Greek yogurt), Dijon, celery, grapes, red onion, parsley, salt, and pepper. Add lemon juice if using. Mix well until evenly combined.
Spoon about 1 tablespoon of the chicken salad into each serving base (phyllo cup, cucumber slice, cracker, etc.).
Garnish with extra herbs or toppings if desired. Serve chilled or at room temperature.
You can make the chicken salad up to 2 days in advance — just store it in an airtight container in the fridge.
