  • 2 celery stalks, diced
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tbsp chopped fresh parsley (optional)

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp honey (optional)
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  • Prepare the Dressing:
    • In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, honey (if using), salt, and pepper until smooth.
  • Combine the Salad Ingredients:
    • In a large mixing bowl, combine the chicken, grapes, apple, celery, pecans (if using), and parsley.
  • Toss the Salad:
    • Pour the dressing over the salad ingredients and toss gently until everything is evenly coated.
  • Chill and Serve:
    • Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.

Notes

  • Use rotisserie chicken or leftover roasted chicken for convenience.
  • Add a splash of lemon juice to the apple to prevent browning if making ahead.
  • Substitute Greek yogurt for all the mayonnaise for a lighter option.
