Chicken Street Tacos are a delicious Mexican-inspired dish made with seasoned grilled chicken, served on small corn tortillas and topped with fresh ingredients like onion, cilantro, and lime.

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn tortillas
  • 1/2 cup diced white onion
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional toppings: diced avocado, salsa, cotija cheese

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add chicken and toss to coat. Marinate for at least 30 minutes in the refrigerator.
  2. Heat a grill or skillet over medium-high heat. Cook chicken for 5-6 minutes per side or until fully cooked. Let rest for 5 minutes, then dice into small pieces.
  3. Warm the corn tortillas on the grill or in a skillet until soft and pliable.
  4. Assemble tacos by adding diced chicken to each tortilla. Top with diced onion, chopped cilantro, and a squeeze of lime juice.
  5. Add optional toppings as desired and serve immediately.

Notes

  • For extra flavor, marinate the chicken overnight.
  • You can substitute chicken breasts, but thighs offer more flavor and moisture.
