  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1/4 cup chicken broth or water
  • 1 tsp sesame oil
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, chicken broth, sesame oil, and red pepper flakes to make the sauce; set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add diced chicken and cook until golden and cooked through, about 5-7 minutes.
  4. Add minced garlic and stir-fry for another minute until fragrant.
  5. Pour the peanut sauce over the chicken and toss to coat evenly.
  6. Simmer for 2-3 minutes until the sauce thickens slightly.
  7. Garnish with sliced green onions and sesame seeds before serving.
