Choco Cheesecake Cookie Bites are rich, bite-sized treats featuring a chocolate cookie base topped with creamy cheesecake and a drizzle of melted chocolate—perfect for parties or a sweet snack.

  • 1 cup chocolate cookie crumbs (from chocolate sandwich cookies, without filling)
  • 2 tablespoons melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted (for drizzle)
  • Mini chocolate chips or sprinkles (optional for garnish)

Instructions

  1. Preheat oven to 325°F (163°C). Line a mini muffin tin with paper liners or grease lightly.
  2. In a small bowl, mix chocolate cookie crumbs with melted butter until combined. Press about 1 teaspoon of the mixture into the bottom of each mini muffin cup to form a crust.
  3. In a medium bowl, beat cream cheese and sugar until smooth and creamy. Add egg and vanilla, mixing just until combined.
  4. Spoon the cheesecake mixture over the crusts, filling each cup nearly to the top.
  5. Bake for 15–18 minutes, or until the centers are set. Cool completely in the pan, then refrigerate for at least 1 hour.
  6. Once chilled, drizzle melted chocolate over each bite and garnish with mini chocolate chips or sprinkles if desired.
  7. Store in the refrigerator until ready to serve.
