Chocolate Brownie Cookies are rich, fudgy cookies with a crackly top and chewy center, combining the best of brownies and cookies into one irresistible treat.

  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chunks (optional, for extra chocolate)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt butter and 1 cup of chocolate chips together in 30-second intervals, stirring until smooth. Let cool slightly.
  3. In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until light and fluffy.
  4. Stir in the melted chocolate mixture.
  5. In a separate bowl, whisk flour, cocoa powder, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  6. Fold in extra chocolate chips or chunks if using.
  7. Drop tablespoon-sized scoops onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 9–11 minutes, until the tops are shiny and crackled but the centers are still soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Do not overbake for maximum fudginess.
  • Chill dough for 15–30 minutes if it’s too soft to scoop.
  • Great for freezing—store baked cookies or dough balls in the freezer for up to 3 months.
