  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Cookie Dough Layer:

  • 1/4 cup unsalted butter (softened)
  • 1/4 cup brown sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour (heat-treated*)
  • 1/4 cup mini chocolate chips

For the Chocolate Topping:

  • 1/2 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 tsp coconut oil or butter (for smooth melting)

Instructions

Step 1: Make the Brownie Base

  1. Preheat Oven: Preheat to 350°F (175°C) and grease a mini muffin tin.
  2. Mix Wet Ingredients: In a bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla.
  3. Add Dry Ingredients: Stir in flour, cocoa powder, salt, and baking powder until combined.
  4. Bake: Spoon batter into the mini muffin tin, filling each about 3/4 full.
  5. Bake for 10-12 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  6. Cool: Let the brownie bites cool completely before adding the cookie dough.

Step 2: Make the Cookie Dough

  1. Heat-Treat the Flour: Microwave or bake flour at 350°F for 5 minutes to kill bacteria. Let cool.
  2. Mix Dough: In a bowl, beat butter and brown sugar until smooth. Add milk and vanilla, then stir in flour.
  3. Fold in Mini Chocolate Chips.

Step 3: Assemble the Brownie Bites

  1. Press Cookie Dough: Once brownies are cool, roll small teaspoons of cookie dough and press them onto each brownie bite.
  2. Chill: Place in the fridge for 10-15 minutes to set.

Step 4: Add the Chocolate Topping

  1. Melt Chocolate: Microwave chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  2. Drizzle or Dip: Drizzle over the cookie dough layer or dip the tops for an extra chocolatey touch.
  3. Chill: Let set in the fridge for 15 minutes before serving.

Notes

  • Storage: Store in an airtight container in the fridge for up to 5 days.
  • Freeze: These freeze well for up to 2 months—just thaw before serving.
  • Make it extra fancy: Sprinkle with sea salt or add chopped nuts!
